Salary/Position Classification

  • $58,800 - $62,000+ Annual, Dependent on Experience, Exempt
  • 40 hours per week
  • Earliest Start Date: July 1 2026
  • This position will work onsite at UND Grand Forks, ND campus

Purpose of Position

The primary purpose of this position is to provide dietary guidance and support for the department and students with food allergies. This position will meet with perspective students, their families, and current students to review dietary restrictions and formulate a plan to accommodate their restrictions. In addition, this position is responsible for nutrition related student programming, department food safety training, to include routine food allergy training and ensure compliance within the operating units.

Duties & Responsibilities

Nutritional programming

  • Develop nutritional programming for the residence hall students based on the services and offerings provided within dining services.
  • Collaborate with campus departments to plan and implement nutrition education and interactive activities: workshops, cooking contests, and pop-up events.
  • Establish initiatives to promote healthy eating within the dining center and retail dining.
  • Focusing on dining options, Establish routine nutritional communication to residence hall students.
  • Participating in the campus student orientation resource fairs, providing nutritional information for attendees
  • Provide nutritional and allergen programming target to the RA Staff.
  • Establish a monthly student advisory group.

Nutritional counseling

  • Meet with perspective students and their families to review the students’ dietary restrictions and answer questions about the services provided by dining services.
  • Meet with current students with dietary restrictions to review their restrictions, review options and services provided within the dining program, and develop a plan if restrictions cannot be accommodated through what is currently offered.
  • Follow up meetings throughout the semester with students to ensure dining services continues to meet their dietary needs

Food safety and sanitation compliance

  • Working with the departments training manager, design and facilitate staff food safety, nutrition and sanitation training programs.
  • Provide weekly foods safety tid-bits to all dining services staff, focusing on small bits of information.
  • Working with the housing and dining marketing team, create or update all printed and digital nutritional and allergen publications.
  • In collaboration with the Executive Chef for residential dining, develop balanced, inclusive and allergen-conscious menus.
  • Visible in the production and service areas to ensure team members are following the established food safety guidelines.
  • Review menus and recipes to ensure food allergies are properly identified and labeled withing the recipe.

  • Ability to establish good rapport with students, parents and other stakeholders.
  • Ability of analyzing and evaluating information and prioritizing work
  • Ability to work collaboratively in a team environment with a diverse university dining service department
  • Comprehensive knowledge of safety principles used in food service.
  • Comprehensive knowledge of food allergens and dietary restrictions.

Minimum Requirements

  • Bachelor’s degree in nutrition and Dietetics: May 2026 graduates will be considered
  • Must be a Registered Dietitian or successfully complete license requirements within 14 months of employment
  • Experience with computers and of MS Office with emphasis Excel, Word and Outlook applications
  • Successful completion of a Criminal History Background Check

Preferred Qualifications

  • Experience developing and implementing nutritional programming in a college/university setting.
  • Experience working with students with dietary restrictions.
  • Experience developing allergen free menus.
  • Experience working with digital nutritional accounting systems.
